Now that I have read Descrates writings I know the real meaning of the quote. "I think, therefore I am" is a big part of epistemology, which is the study/theory of knowledge (opinions v. beliefs). The quote means if your doubting your existence, then you exist. You wouldn't be able to use your mind if you weren't alive so Descartes made a theory that if you can doubt that your alive, your alive. The body (senses) is useless without the mind (irrefutable truth).
